There are so many variations and also chicken tikka can be used as base dish for cooking many dishes like “Chicken Tikka Masala (CTM)”, the national dish of UK. You can also make butter chicken with this and so many others.
Ingredients:
▪Boneless Chicken. I like to use chicken thighs pieces which are less fibrous and more juicy when cooked as compared to breast piece.
▪Ginger garlic paste
▪Lemon
▪Hung curd.
▪Turmeric Powder, Red Chilly Powder, Garam Masala Powder, Salt.
▪Kasoori Methi powder. Roast Kasoori methi and crush them with the help of your hands.
You need to marinate in 2 stages
First marinade
Cut the chicken pieces into desired size. Squeeze some lemon juice and ginger garlic paste. Mix it well and place in refrigerator for at least 3-4 hours.
Second marinade
Mix hung curd, turmeric powder, chilly powder, Garam masala and salt. Also add about 2 tablespoons of mustard oil for pungent flavor; you can use any other vegetable oil also. Add chicken pieces and mix well.
Tip:
If your marinade is not holding to chicken, you can add little gram flour.
Keep the marinated chicken in fridge for another 2 hours at least.
You can cook the chicken on BBQ, Oven or even on grill pan. While cooking keep brushing with little oil, which will keep it succulent & juicy and avoid being dry from inside.
