“Dunkin-Dumplings” Dahi Vada dunked in creamy yogurt with spicy, sweet and tangy chutney.
Dahi Vada / Lentil Dumpling in Creamy Yogurt
Another all time favorite savoury item which can be served as “Chaat” or a side dish served along with main course.
Ingredients:
▪Soaked urad dal.
▪For stuffing chopped almonds, cashew and raisins
▪salt
▪oil for frying
Grind the soaked dal into smooth paste. The batter should be of thick consistency. Add little salt and beat the batter with beater or spoon to have very fluffy.
Heat the oil in a karahi. To make dumplings, take some batter in one hand, use your thumb to make some space in center and add the chopped nuts. Then close and gently dip on hot oil. Fry on low to medium heat till light brown. Take out and place them in a bowl of lukewarm or normal water.
Whisk the strained yogurt, adding a little powdered sugar to balance the sourness. Add salt as per your taste.
Plating:
▪Squeeze the vadas gently to drain the water and dip them in yogurt mix and place them in serving dish.
▪Sprinkle cumin powder. The tip is to use little burned cumin for making this powder.
▪Sprinkle red chill powder.
▪Add tamarind chutney and green chutney as per your taste.
▪You can garnish with pomegranate, coriander and thin ginger juliennes.
