Mung bean noodles with veggies and eggs.
A healthier alternative to egg noodles or maida noodles, mung bean noodles work well with far eastern cuisine for me.
A package of noodles, your choice of veggies ( I used onions, broccoli, mushrooms, leeks, garlic and ginger), soya and oyster sauce..( I use leftover lettuce also – tastes yum)
Boil water, add noodles for 2 mins, drain and rinse with cold water
Sauté garlic, ginger and onions in sesame oil, till golden, add other veggies, cook for 4-5 mins..
Add in the soya and oyster sauce, add noodles after a minute, stir well.
Add coriander and let it cook for 4 mins
Meanwhile make eggs omelette, cut into thin strips and top the noodles, you can also add the eggs in with the veggies, just don’t let it burn.
