Aaloo Soya Vadi Sabzi - Potato Soya Chunks Curry
This Sabzi / Curry goes really well with either roti, puri, parantha or rice, as you may like.
Ingredients:
▪Boiled potatoes
▪Soya Nuggets
▪Sliced Onions
▪Tomato concasse. de-skin the tomatoes and run through in blender.
▪Chopped garlic
▪Ginger Garlic paste
▪Green chilies chopped
▪Kasoori Methi
▪Zeera, asoefoetida, mustard seeds
▪Coriander Powder, Turmeric Powder, Red Chili Powder and Garam Masala Powder
Method:
Bring water to boil and then place soya nuggets and cover the lid for 2-3 minutes simmering on low heat. Let it remain soaked for about 15-20 minutes. Later strain and run through tap water, squeeze the soya vadis and cut them into smaller pieces.
In a pan, heat the oil about 3 tablespoons. I prefer mustard oil for that pungent kick; you can substitute that with any other vegetable oil. Tamper it with 1 teaspoon zeera/cumin seeds, 1/2 tsp mustard seeds and good pinch of asoefoetida.
Add chopped garlic, then sliced onions and fry them till onion are light pinkish. Then add tomato concasse and ginger garlic paste. Add spices, 4 teaspoon coriander powder, red chili powder as per your taste, chopped green chilies. Add salt as per your taste. Keep frying till oil separates.
Add boiled potatoes, broken into small pieces. Fry for 2-3 minutes with masala. Then add chopped soya vadis. Fry for another 2-3 minutes and then add boiling water. Add 2 tablespoons of Kasoori methi and 2 tsps garam masala. You may add the water depending upon whether you want to it with rice or puri/parantha/roti. Keep it on simmer for about 15 minutes to let all the ingredients amalgamate.
My tip, is not to have too much gravy, even if you want with rice, as it dilutes the taste a bit. But it all depends on your individual liking.
